triple citrus margaritas

Happy belated Cinco de Mayo! We decided the fifth of May was an excellent excuse to enjoy some homemamde tacos and margaritas, and some recipe experimentation lead me to this delicious combination, great for enjoying all summer long. . .

Margaritas with Triple Citrus Simple Syrup

Ingredients

1 c sugar

1 c water

5 tbsp honey

zest of 3 limes, 2 lemons, and 1 orange

2 c orange juice (about 3 large oranges)

3 c lime juice (about 20-25 limes)

1/2 c lemon juice (about 3 lemons)

Make the simple syrup by combining the water, sugar, honey, and citrus zest in a small pot and just bring to a boil. Stir until sugar is dissolved and allow to cool.

Once the syrup is cooled, combine it with the lemon, lime, and orange juices, and add 5-6 cups of water, depending on your desired strength (remember that pouring over ice will dilute it a little). This makes up to a gallon of margarita mix (which I split into two, two-quart containers).

Slide a lime wedge around the rim of a glass, dip in kosher salt, fill glass with ice and an optional splash of tequila (these are just as good non-alcoholic too!), top off with margarita mix, and enjoy!
